Ingredients:

Here’s all you will need to make this tasty recipe!

Cupcakes:
  1. 2 tablespoons of Beanies Decaf Irish Cream Coffee.
  2. 2 medium eggs.
  3. 100g self raising flour.
  4. 100g caster sugar.
  5. 100g butter.
  6. Cupcake cases
Icing:
  1. 500g icing sugar
  2. A piping bag
  3. 250g unsalted butter
Optional:
  1. 1 teaspoon coffee beans.
  2. Your favourite mint chocolate.
  3. Sprinkles.

Method:

  1. Combine the butter and caster sugar together until the mixture is creamy.
  2. Mix in the eggs and the coffee
  3. Carefully fold in the flour until all is combined
  4. Spoon the mixture into cupcake cases and bake at 180c for 15-20 minutes.
  5. Mix icing sugar and unsalted butter to make frosting, add to a piping bag.
  6. Pipe the frosting onto the cupcakes, make sure they are fully cooled first!
  7. Top with some optional extras like mint chocolate, coffee beans or sprinkles!
