How to make cheddar cheese in the UK

What is cheddar cheese?



 

Cheddar originates from the village of Cheddar in Somerset. There is a particular type of cheddar with a protected designation of origin status called "West Country Farmhouse Cheddar". It can only be produced in Somerset, Dorset, Devon and Cornwall using local milk and via traditional manufacturing methods. This version of cheddar is closest to the original form of cheese that originated in Cheddar village.
 

Cheddar that isn't produced in this way can simply be called "cheddar" no matter where or how it is produced, and cheddar around the world varies in texture and taste. However, here in the UK, it is a firm cheese with a moisture content of less than 39%. It can vary in colour, maturity and flavour. Young cheddars tend to be mild in flavour and creamy in texture, whilst aged cheddar has a chalkier texture and sharper, stronger flavour.



 

How to make cheddar cheese in the UK



 

Cheddar begins life as whole milk which is gently heated before a starter culture of friendly bacteria is added to ripen it. Rennet is then added to solidify the proteins of the milk to produce a mass called a coagulum. The coagulum is repeatedly sliced to produce curds and these float in the remaining liquid which is called whey. The curds and whey are separated and loaves of curds are stacked on top of each other to help excess whey drain off. This process is known as "cheddaring". The curds are then salted and pressed into moulds where they remain as they mature.
 

The maturing process is where the cheese develops its flavour. Traditionally, cheddar cheese was stored in stone barns which maintained a cool temperature, but purpose-built stores are now used to ensure a consistent temperature. The cheese is sampled periodically as it matures to ensure it develops the expected aromas and textures.
