Cheesy Pumpkin Pasta Bake

You will need: 
 

  • A Frying Pan
  • A Cooking Spoon
  • A Knife
  • A Sauce Pan
  • A Blender
  • A Baking Tray
  • A Cheese Grater
 

Ingredients:
 

  • A Drizzle of Olive Oil
  • A Pinch of Salt
  • 1 Red Onion
  • 3 Garlic Cloves
  • A Medium Pumpkin
  • 50ml Whole Milk
  • 2 tbsp Tomato Puree
  • 2 tbsp Cream Cheese
  • A Pinch of Black Pepper
  • Lymn Bank Farm Applesmoked Cheddar Barrel
  • Chuckling Cheese Charcoal Cheddar Truckle
  • 350g Penne or Rigatoni Pasta
 

Method:
 

  1. Preheat your oven to 200°C.
     

  2. Heat the olive oil in a frying pan over a medium heat, and add the chopped red onion with a pinch of salt and cook for 5-10 minutes. 
     

  3. Crush three cloves of garlic and add these to the onions and leave to fry for 5 minutes before removing the pan from the heat. 
     

  4. Chop your pumpkin into 3cm wide pieces and cook in boiling water for 10-15 minutes or until tender when pierced. When cooked, drain the pumpkin and add it into your blender (or you can blitz it in the pan if preferred) with the onion and whole milk. Blitz until completely smooth. 
     

  5. Tip your pumpkin sauce into a frying pan, and add in the tomato puree and cream cheese. Mix and simmer it over a low heat, allowing it to thicken. 
     

  6. Grate your barrel of Applesmoked Cheddar and add into the sauce, mixing thoroughly. 
     

  7. Whilst your sauce simmers, cook your pasta as per the instructions. Once cooked, add it to the sauce and mix thoroughly to ensure the sauce coats the pasta. 
     

  8. Pour the pasta into your baking tray evenly, and top with your grated Charcoal Cheddar. 
     

  9. Bake in the oven for 15 minutes or until your liking, and serve immediately.
