Hot & Garlic Cheesy Veggie Pasta Recipe

Full of tomatoey, cheesy, creamy goodness…what’s not to love! And the best thing about this recipe is that you can pack it full of wonderful veggies (perfect for those who “hate” them...they won’t even notice)! This versatile dish, which uses our Lymn Bank Hot & Garlic Cheddar Cheese Barrel, can even be tailored to your liking! If you fancy you can add chicken, or sausages, or even more vegetables, and it will be just as delicious!
 
Hot & Garlic Cheesy Veggie Pasta Recipe Close Up Image

You will need:
 

- A knife
- A chopping board
- A teaspoon
- A tablespoon
- 2 x Large saucepans
- Cooking spoon
- A colander
- A cheese grater


 

Ingredients:
 

- 2/2 Peppers
- 1 White Onion
- 500g Button Mushrooms
- A Pinch of Salt & Pepper
- 1-2 Tbsp Olive Oil
- 1 tsp Garlic Powder, Oregano, Dried Basil
- 300g Pasta (whichever type you fancy, we chose Penne)
- Lymn Bank Hot & Garlic Cheddar Cheese Barrel
- 1 Can of Chopped Tomatoes
- 2 Tbsp of Tomato Puree
- 150ml of Double Cream


 

Method:
 

  1. Heat the oil in a large saucepan over a medium heat. Add the tsps of herbs and the chopped onion to the saucepan to gently fry for 3-4 minutes, mixing regularly to ensure it does not burn or stick to the pan. 
     

  2. Add the pepper, stir together, and allow to cook for 2-3 minutes before adding the mushrooms and stirring together once more. 
     

  3. Once the mushrooms have cooked for 2-3 minutes, add in the tomato puree and mix it into the vegetables. 
     

  4. Pour the can of chopped tomatoes into the saucepan, stir, and allow the sauce to come to the boil. 
     

  5. Using the second saucepan, cook the penne following pack instructions. 
     

  6. Whilst the pasta is cooking, reduce the heat of the pasta sauce, add the salt and pepper, and double cream. Leave to simmer for 10-15 minutes, stirring continuously. 
     

  7. Once cooked, drain the pasta and add it to the sauce mixture and generously stir it to ensure all the pasta is covered in the sauce. 
     

  8. Grate 50g of the Lymn Bank Hot & Garlic Cheddar Cheese Barrel and add this to the pasta and stir in. 
     

  9. Remove the pasta from the heat, and serve immediately. 
     

  10. Grate the additional Hot & Garlic Cheddar and sprinkle it on top of each serving. 
     

  11. Enjoy!
