Mexican Sweet Chilli Cheese Quesadilla

  • Chuckling Mexican Sweet Chilli Cheese

  • Tortilla wraps

  • Onions

  • Peppers

  • Chicken or breaded chicken

  • Kidney beans

  1. Begin by cooking your chicken, we went for a breaded option.

  2. In a pan add your onions and peppers, seasoning to taste with salt, pepper, garlic, cajun, paprika and cumin, slowly sautee these, once cooked, place on a plate to the side.

  3. While they are sauteing, cook the kidney beans according to the cooking instructions provided on the packaging and grate the Mexican Sweet Chili cheese.

  4. Once everything is cooked, place the wrap into a hot frying pan and start placing the cooked onions and peppers on one side of the tortilla wrap. Add the kidney beans and chicken onto the same side that you put the onions and peppers on.

  5. Add grated cheese to the other side of the tortilla wrap and once it starts to melt. Fold it over across the rest of the ingredients on the other half of the wrap. Then place grated cheese on the exposed side of the frying pan and flip the tortilla wrap over. This will then melt the cheese onto the outside of the wrap.

  6. Cook until the wrap turns a golden brown color and then take the Quesadilla out of the frying pan, garnish with some coriander and serve.
